Inspector's notes

-- Chicken chalupa taco shells observed unattended and sitting out near fryer station with internal temperatures ranging between 58°F-65°F using probing thermometer. An employee stated the items were removed from the walk-in refrigerator and placed there approximately 10 minutes prior to the inspection. At the time of inspection, the chicken taco shells were placed in reach-in refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
