Inspector's notes

Observed no test strips in establishment. Person in charge stated they had ordered new test strips and are waiting on them. Discussed with PIC establishment must have sanitizer test strips available at all times, and discussed having a spare set available. Observed establishment's current sanitizer dispensing system outputting proper amounts of sanitizer for warewashing. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips prior to re-inspection. Corrective Action: Correct prior to re-inspection.

PIC stated the vent hood has not been functioning for over month and a half and is unable to function properly at all. There is a work order placed to fix equipment but they are unable to find a repair person at this point. Instructed PIC to repair this vent hood system as soon as possible and discussed public health risks. Ventilation hood systems and devices shall be sufficient in number and capacity to prevent grease or condensation from collecting on walls and ceilings, and prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single use articles.
