Observed two covered containers of cooked chopped chicken at 47 and 53 Deg. F. respectively in the walk-in. Per the establishment's cooling log they were pulled out of the oven at 11:00 AM at over 135 Deg. F. Please be sure to keep containers of Time Temperature Control for Safety Foods uncovered and placed on upper shelves in the walk-in during the cooling process. Also suggest another temperature check after the initial two hours during the cooling process. Corrective Action: Corrected at time of inspection.
