Observed wet sponges in three compartment sink dishwashing area. Person in charge stated they use the sponges for food contact surfaces when dishwashing. Discussed removal of the sponges due to their porous nature and replacing them with non-absorbent alternatives like scrub pads. Corrective Action: Correct prior to next routine inspection.
