Observed traditional stone molcajetes inside the kitchen along the cook line and on a metal wire rack near the dish area. Provided education and communicated that traditional molcajetes are porous and not easily cleanable and are prohibited from being used as a direct food contact surfaces at the previous routine inspection. Per manager, they have been used to serve food in, but are not a popular item and are not used frequently. Instructed manager to remove molcajetes from kitchen and discussed other, approved uses inside restaurant (e.g. decoration). The establishment shall remove unnecessary items from the kitchen. Corrective Action: Correct prior to next routine inspection.

Discussed the following topics/requirements with the kitchen manager: 1) Providing asterisk for Huevos Rancheros menu item to accompany the already present consumer advisory 2) Close gap at bottom of back door. Traditional stone molcajetes were observed inside the kitchen. Per manager, they are used as a food contact surface. Informed manager that traditional stone molcajetes are not smooth and easily cleanable, and shall not be used in contact with food. Additionally, manager and inspector discussed pet friendly patio area. Provided pet friendly patio application directions via email.

Observed yellow-brown organic material in soda gun nozzle at the bar. Person in charge disassembled soda gun then washed, rinsed, and sanitized it at time of inspection. Reviewed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness.
