Observed portioned out cooked peas in steam table holding 100-120 F, per PIC food items were placed there 30 minutes prior. Discussed with PIC proper hot holding temperatures. Food items were reheated to 165 F. Observed overfilled mashed potatoes holding 125 F at overfilled portioned. Discussed with PIC that food items should not exceed designated fill lines. Observed sour cream and salads sitting above cold holding wells inside of prep table holding 47-51F, per PIC food items were placed there a little less than 1 hour prior. Discussed with the person in charge that food items need to be placed in cold holding wells to maintain proper temperature. Salads and sour creams were placed in fridge to cool properly. Also observed stand up fridge next to freezer side of kitchen with mechanical dishwasher holding ~47 F at coldest with min/max thermometer and was checked 3 times over an hour period. with food items inside were holding (43-50 F) like tomato sauce, potato salad, solvank soup (cabbage and sausage), chicken noodle soup, mushroom soup, sausages, grilled onions, and cooked potatoes. Discussed with PIC that fridges must hold 41 F at all times to hold TCS food items. All food items were prepared earlier in day and were moved to fridges holding 41 F.
