Observed cooked rice cooling in a prep cooler at the time of inspection. Cooked rice was in the appropriate time/temperature for cooling at the time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Person in charge moved the cooked rice to a standing refrigerator to cool more efficiently. Corrective Action: Corrected at time of inspection.

Observed the scoop used to portion rice being stored in the rice cooker with its handle in contact with the rice. Also observed the ice cream scooper being stored in standing water measuring 74*F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed two battery operated soap dispensers at hand wash sinks non operational thus leaving the handwashing sink/stations without a handwashing cleanser. Discussed the importance of having all hand sinks supplied with hot water, soap and paper towels to support proper handwashing. Batteries were replaced and soap were avaialble at time of inspection.
