Observed PIC use register, touch headset, and refilled sanitizer buckets then proceed to donned gloves and prepare a customer order without washing her hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Observed open package of hot dogs located in the bottom of the prep cooler without a date mark. Per PIC, she was unsure of when the hot dogs were open, possibly a day prior to the inspection since the package was fairly full. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
