***SECOND Consecutive Violation*** In top portion and drawers of prep table cooler closest to wall, TCS foods (cut tomatoes, hard boiled eggs, portioned proteins, cut leafy greens, cooked corn) with internal temperatures of 44*F-46*F. Per employee and log sheet, internal temperatures were taken within 3 hours and within normal range. Employee provided ice bags to TCS foods to rapidly cool back down to the proper temperature. Ambient temperature of prep table cooler was 39.2*F, taken with inspector probe thermometer. Repair company was called to ensure prep table cooler is working properly, especially during busier times of service when top of unit is maintained open. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Observed boiled eggs at a temperature of 48F across from the grill line in the top of the cooling unit. Per PIC the boiled eggs have been in the top cooling unit since 11am. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection, by inspector embargoing the boiled eggs. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Observed the dishwashing machine in use while dispensing 0 ppm chlorine in the sanitize cycle. Upon troubleshooting, the bottle of sanitizer and detergent got switched. After switching them and flushing the lines, the machine was dispensing at 100 ppm. Sanitizer must be in the sanitize cycle and dispensing at the proper concentration as stated on the bottle of sanitizer. Corrective Action: Corrected at time of inspection.
