Observed pre-packaged chimichangas/59°F and cheeseburgers/ 60°F stored at room temperature across from the microwave ovens. Except during preparation, cooking, cooling, or when time is used as a control all Time/temperature controlled for safety (TCS) foods shall be maintained at 41°F or less. According to the person in charge the chimichangas and cheeseburgers had been stored at room temperature since 10:00AM. The chimichangas and cheeseburgers were returned to the reach in coolers at time of inspection. Discontinue holding TCS foods at room temperature unless utilizing 4 hours time as a control.
