Observed no Certified Food Protection Manager (CFPM) certificate onsite at time of inspection. PIC stated the owner has a CFPM certificate but was not onsite at time of inspection. PIC is scheduled to obtain CFPM certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed TCS items such as cooked rice, cut tomatoes, cut lettuce, and cheeses in main prep cooler at temperatures ranging from 46°F to 51°F. PIC stated the unit had been put in for a work order, but was being used to store TCS items. The in-unit thermometer read 50°F. Items had been placed in prep cooler about 20 minutes before establishment opened for the day, about an hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed house-made hummus in portioned containers and nduja (sausage paste) that had been prepared 4/3 without date marks. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed an employee slice a sandwich with a knife then wipe the knife with a wiping cloth stored on top of the prep cooler with no sanitizer. All in-use wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
