Observed the cold holding unit across from the friars in the back of house is not currently operational and the kitchen team is using ice and time as a control for their food. In a hot holding well in the kitchen, observed a pan of cheese at 110-120*F in the middle and a pan of tomato sauce at 110-120*F in the middle. Per employee, these foods were reheated to 165*F prior to placing them in the well. Foods had been in unit for 45 min. Foods were reheated to 165*F and placed back into hot holding.
