-- In food storage hot box and in steam table, observed several containers of ground beef with internal temperatures ranging between 108°F-118°F. An employee stated the ground beef was cooked and placed in warmers approximately 1.5 hours prior to the inspection. All TCS foods improperly hot held were reheated in oven to 165°F at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

-- Liquid waste water inside floor drain near ice machine observed overflowing significantly unto floors when plumbing fixtures were in use (drains for: coffee machine, water refill station, ice machine, and hand sink). The drain was unable to be immediately cleared by management. Reviewed imminent health hazards and MCESD requirements with the person in charge: Sewage waste shall be drained from point of discharge to disposal according to law. If there is backflow of sewage via any drain at the establishment that cannot be immediately resolved, the establishment should suspend operations until repairs are completed. At the time of inspection, the maintenance technician was able to pump, snake, and clear the drain. Ran all connected plumbing fixtures for several minutes to verify drain remained cleared after repairs. Corrective Action: Corrected at time of inspection.
