#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed many TCS foods with internal temperatures ranging 45*F-59*F stored in two open-face grab and go style refrigeration units. These TCS foods include: milk, cheese tray, green juice, watermelon juice, hard boiled eggs, protein boxes containing quinoa and eggs, veggie trays with hummus, chicken, tuna salad, various sandwiches containing cheese and various deli meats, fruit cups, and yogurt (See embargo form for full list). Ambient temperature of the units ranged 48.2-48.9*F at the start of inspection. Observed the unit overstocked with food product, covering most of the ventilation holes in the back panel of the unit. PIC was able to identify which product was stored in the unit for greater than 4 hours. PIC discard all TCS foods held greater than 4 hours at time of inspection. Food was embargoed. After removing the improperly held food and reorganizing the product left, the units' ambient air temperature ranged 39.8*F-40.8*F. Discussed with PIC and staff that the units should be stocked with product away from the back panel and not fully to the top to allow for proper air flow. Suggested requesting smaller orders or obtaining alternate onsite refrigeration. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
