No backflow observed connected to the water purification system and soda machine carbonator. Observed a corroded RPZ on the wall that is disconnected from the system. Observed the drain line from the water purifier inserted directly into the drain line of the hub drain for the old RPZ. All testable backflow devices must be certified. All RO systems must have an approved reduced pressure zone assembly backflow device meeting ASSE 1013 standards installed upstream from RO system. Provide an approved backflow device prior to re-inspection. PIC stated a plumber was onsite yesterday to fix a cracked cleanout cover and may not have realized there were two issues needing to be fixed. Corrective Action: Correct prior to re-inspection.

No paper towel at the hand wash sink in the warewashing area. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection. 5-205.11 - Priority Foundation: Using a Handwashing Sink-Operation and Maintenance. Observed an ambient air temp of 46*F in the sandwich prep cooler on the line. Inside the cooler, observed TCS foods holding between 48-51*F, including sliced and shredded cheese and cut lettuce. PIC stated they are unsure if the cooler was serviced. Observed TCS foods double panned with the lower pan sitting on top of ice without water. All foods had been in the cooler less than 4 hours per PIC. PIC setup a proper ice bath to rapidly cool foods. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection.

Observed an ambient air temp of 48*F in the sandwich prep cooler on the line. Inside the cooler, observed TCS foods holding between 45-66*F including, shredded cheese, cut lettuce and deli cheese. Observed the cheese triple panned above ice water and the sliced lettuce sitting on top of ice water. Also observed cut lettuce inside the cavity of the cooler. PIC stated they are unsure how longs the foods had been in the cooler. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. At the chicken breading station, observed raw chicken and battering liquid measuring 44-46*F with a probe thermometer. Observed the ice bath beneath the battering station melted with water measuring 50*F. Per PIC, the ice bath is replaced every 6 hours. Advised PIC to replace ice more frequently, as needed. Reviewed proper ice bath setup with PIC. Corrective Action: Corrected at time of inspection.

Observed medium plastic container of cooked rice in the same unit with a probed temperature of 108-110 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Observed two trays of coleslaw in the reach in under the same cold top with a temperature range of 44- - 50 degrees F. Person in charge (PIC) stated items have been in there for less than an hour. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
