Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Observed multiple TCS food items in walk-in fridge internal temperatures above 41°F. Items include coleslaw (47°F), raw chicken on thawing racks (45-47°F), buttermilk batter (47°F), cheddar cheese (50°F). Walk-in fridge ambient temperature measured 50.6°F with min/max thermometer. Observed temperature log from approximately 8am showing walk-in fridge temperature 34°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods were put on ice, moved in the freezer, or moved to alternative functioning refrigeration unit to rapidly cool. Corrective Action: Corrected at time of inspection.
