Observed blanched fries in several containers stored on cooling rack at room temperature. Time on stamp indicated 10:25am less than 1hour ago, temperature taken during inspection indicated 90*F. Discussed with Operator rapid cooling methods must include acceptable methods: rapid cooling equipment (Blaster), ice bath, adding ice as an ingredient or inside walk-in refrigeration unit as soon as temperature on fries is verified at 135*F. Discussed with operator to place fries in walk-in refrigeration unit at time of inspection. Corrective Action: Corrected at time of inspection.

Observed blanched fries with an internal temperature of 104F-95F. Person in charge states that fries were cooked 2 hours prior to inspection and are left till it reaches room temperature. Had person in charge put fries in walk in fridge and discussed having FRIES PUT IN FRIDGE WHEN REACHING 135F and reach 135F to 70F in 2 hours and 70F to 41F in 4 hours.

Observed several plastic containers of blanched french fries that according to PIC were fried at 11:30 AM. Internal temperature measured between 74-80°F for each container of fries at 2:30PM. Three hours had passed at the time of inspection. Employee voluntarily discarded approximately 250lbs of french fries. Advised employee to store fries in walk in refrigeration unit as soon as the internal temperature reaches 135°F. All TCS food must be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. Correct By: Corrected At Time Of Inspection
