Inspector's notes

Observed fried chicharron with meat on counter at time of inspection. Internal temperature of chicharron was 70*F. PIC states the chicharron had been there since Monday. PIC also states the chicharron is usually in the hot holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Recommended switching to time as a control for the TCS item and making smaller quantities at a time. Corrective Action: Corrected at time of inspection.
