Per PIC, no temperature check was taken of the cooked chicken wings within four hours prior to inspection. Observed cooked chicken wings inside walk-in cooler with 47°F internal temperature, per probe thermometer. Per PIC, chicken wings were cooked day prior to inspection, stored directly into walk-in cooler, and then were not temperature checked until time of inspection. Cooked TCS foods shall be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.
