Observed sliced turkey, ham, boiled eggs, chopped lettuce, and mayo in metal pans, and pancake batter in large cylinder plastic containers, in cold holding unit in far corner near grill with an internal temperature ranging 46-50*F. Person in charge stated foods were 41*F within 1 hour of inspection. All foods were placed on ice or neighboring units for quick cooling to 41*F. Foods reached an internal temperature of 43-48*F within 30 minutes, and were still cooling. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Observed shredded cheddar in 8in plastic container with an internal temperature of 45-48*F. Person in charge stated foods were prepped within 1 hour of inspection and placed food on ice for quick cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Predefined Comment: All TCS foods cooling were uncovered to allow for rapid cooling. Predefined Comment: All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling.
