Inspector's notes

Breakfast burrito, sliced American cheese, and pre-cooked eggs observed with internal temperature of 52-55*F while being cold held inside the upright refrigerator near fryers. The ambient temperature of the unit was confirmed to be 55*F using inspectors' min/max thermometer and the refrigerator thermometer inside the unit. PIC voluntarily discarded products at time of inspection. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. PIC placed an out of order sign on the unit and advised staff not to use it until fixed. 2nd REPEAT VIOLATION Corrective Action: Corrected at time of inspection.

The ambient temperature of the unit was 61*F according to the refrigerator thermometer that was inside. Per PIC, the unit was working properly during food safety check a few hours prior to this inspection (Less than 3hrs). All products were relocated to the walk-in cooler where they were later observed at 43*F and dropping. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC.PIC advised staff not to use the refrigerated drawers until the unit can old an ambient temperature of 41*F or below.
