Calibrated inspector's Thermapen and min/max thermometer along with manager's thermometer in ice water at- 32*F. Observed refrigerated unit on cook line to have ambient temperature measured to be 48-49*F holding Time/temperature Control for Safety (TCS) foods (cut lettuce, beef, chicken, shrimp, crab) with internal temperatures measured to be 46-50*F. Per Person in Charge items were just stocked in unit this morning (two hours prior) and temperature of unit was not checked at that time. PIC put TCS foods on line in ice bath to facilitate rapid cooling and called for repair. This cooler is used mostly for non TCS foods, establishment has adequate alternate coolers to use for TCS foods until this unit has been repaired. Correct By: Corrected At Time Of Inspection
