Blanched French fries in a deep container at 66 degrees F held next to fryer on the counter . Per chef item was there for about 4 hours and was discarded by PIC. Rice cooked and cooled yesterday held at 58 degrees F in food prep table for 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection.
