Observed TCS (time/temperature for safety) food items with internal temperatures between 45F - 49F in the walk-in cooler. Food items included salsas, soups, dairy creams, sour cream, cooked beans, shredded beef/chicken, cooked whole chicken pieces, and cooked beef steaks. The food items had various date marks from 11/7 thru 11/22, more than 4 hours. The food items were embargoed at the time of inspection. Discussed proper TCS cold holding temperature of 41F or below. The establishment has several other reach in coolers, prep coolers, and freezers where TCS foods can be maintained at proper cold holding temperature of 41F or below.
