Inspector's notes

Observed 3-compartment sink in bar area with 0 ppm of quat sanitizer with a pink container lid in it. Food-contact surfaces sanitized using quaternary ammonia must be at a concentration of 150-400 ppm. Person in Charge (PIC) added more sanitizer to the solution at time of inspection (150 ppm concentration after additional sanitizer). PIC re-sanitized the food-contact surfaces at the time of inspection. Discussed with PIC about monitoring sanitizer levels when employees are mixing it themselves for the bar 3-compartment sink. Recommended using the pre-mixed quat sanitizer located near the 3-compartment sink in the kitchen to ensure consistent concentration. Corrective Action: Corrected at time of inspection.

Observed cooked and raw fish in reach-in cooler at sushi bar at 46 °F. Air in cooler measured at 46 °F with min/max holding thermometer. Person in charge stated that foods had been placed in reach-in from the walk-in around three hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
