Observed cooked noodles portioned in individual bags, wrapped tightly. The internal temperature of the noodles was 63 degrees F. They were prepared approximately 2.5 hour hours prior to inspection. Instructed PIC to unwrap the noodles to allow for thorough cooling prior to portioning. Discussed cooling methods Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a large batch of beef pho cooling in 10 large buckets (45-57°F) in the walk-in. Staff stated the pho had been made and started cooling the night before the temperature measurement (see embargo) The fat caps for most of the pho buckets had already been broken to increase cooling speed, but the buckets had been stacked in a way that did not allow for maximum air flow. Cooked Time Temperature Control for Safety (TCS) foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Discussed the possibility of using ice wands or the attached freezer to increase cooling speed for future batches and provided cooling guidance via email. Corrective Action: Corrected at time of inspection.

Observed several damp cloths stored directly on the prep surfaces and not sitting in the prepared sanitizing solution. Alerted the manager, who took the incorrectly stored damp cloths and placed them in the laundry and then remade the wiping buckets with fresh clean cloths. Reeducated staff on wiping cloth use limitations. Sanitizing solution is used to sanitize wiping cloths between uses. Wiping buckets are to be remade every 4 hours. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
