Observed the three-compartment sink set up for dishes with the chlorine sanitizer measuring at 25 PPM. Alerted staff who added additional chlorine at the time of inspection, which was then measured in the correct range (50-100 PPM). Staff to test sanitizer concentration each time they hand-dose sanitizer. Discussed the importance of sanitizer in commercial use kitchens and sanitizer requirements with staff. Corrective Action: Corrected at time of inspection.
