Reviewed and discussed: mop sink maintenance procedures; cooling procedures. Air gap rules. Recommend: more restroom checks on men's restroom. Maintaining all drain lines 1" inch above floor drains. Replace missing cold water blue indicator for hand sink to left of main cook line.

Reviewed and discussed: cold holding procedures; cooling procedures; time as control sticker procedures. Recommend: grease trap maintenance. Soda unit maintenance by back door. Replace missing tile by drive thru soda window. Replace flex tube drains for hard pvc pipes. Deep clean behind ice cream unit. Request: RPZ backflow preventer test. The RPZ needs to be tested yearly. Please have test result prior to next routine inspection.If adding new dish machine will require a review with Maricopa County Environmental Services department.
