Observed diced tomatoes in the top portion of the prep refrigerator in a pan with-in a pan at 57 Deg. F (embargoed), sliced ham at 47 Deg. F., and shredded mozzerella cheese at 48 Deg. F. in the top portion of the back prep-refrigerator (placed in the unit below to cool down at the time of insp.). The unit was found open with no one using it at the time of inspection. Coached staff on keeping all TCS foods at least 1" from the top of the pans, keeping the lids down when not in use and using metal pans whenever possible for TCS foods in order to maintain a temperature of 41 Deg. F. below. Corrective Action: Corrected at time of inspection.

Per the time as a control policy that was provided, the pizzas, salads, and other Time Temperature Control for Safety Foods (TCS) should be documented to be discarded after 30 minutes on the buffet line. None of the items were logged at the time of the inspection. Per manager, the buffet runs from 11 until 2 pm after which everything is discarded. The items were discarded soon after the inspection started due to the time of the inspection. Please review and follow the corporate time as control policy for TCS foods at the buffet line. Corrective Action: Corrected at time of inspection.

Observed several covered pans of shredded mozzarella cheese in the walk-in at 47 to 50 Deg. F. Per the manager they were just made with-in the past hour, so the pan lids were removed and the pans were placed in an area of the walk-in to facilitate rapid cooling. Observed packaged salad from AM in a small reach-in display refrigerator at 47-50 Deg. F. Per operator they were packed in the morning and placed in the unit. A discussion was made with management and staff assuring to check product temperatures to assure they are at or below 41 Deg prior to placing in refrigerator unit. Corrective Action: Corrected at time of inspection.

Observed shredded mozzarella cheese in covered containers located in the walk in fridge dated from 2 days ago, 1 day ago, and today. Temperature ranged from 49*F-52*F. Person in charge (PIC) stated that blocks of cheese are stored in the walk in, shredded, then placed back in the walk-in covered. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Mozzarella cheese shredded today had a temperature of 55*F. Person in charge stated that it was shredded 3 hours ago. Cheese was uncovered to rapidly cool. Corrective Action: Corrected at time of inspection.
