Beans, meat, and broth were being hot-held on the steam table at 105 degrees F. The unit had been turned off early in anticipation of the day's end. The restaurant closes at 2:30 pm. Do not leave foods to cool by simply turning off the unit early. Maintain hot foods at 135 degrees F and then cool quickly using ice or refrigeration. The manager then had the foods reheated to 165 F and maintained at 135 degrees F. Corrective Action: Corrected at time of inspection.
