Observed cellophane-wrapped noodles (62°F) at the bottom of the prep table that were cooked 3 hours before temperature measurement. Alerted manager, who placed ice bags in between the bagged noodles at time of inspection to quickly cool them. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed more effective means of cooling and provided Corrective Action: Corrected at time of inspection.

Observed cooked boba (92°F) in a hot holding unit measuring below 135°F. Staff stated that the boba was made and transferred to the hot holding unit around an hour and a half prior. Staff reheated the cooked boba to 165°F, at time of inspection. The hot holding unit was adjusted to a hotter temperature setting.
