Inspector's notes

Observed a refrigerated preparation table back of house on the cook line having an ambient temperature of 54°F measured with mid/max thermometer with TCS food items like sliced tomato's (52°F), raw beef (51°F), raw salmon (53°F), cheese (53°F), sliced onions (52°F), and coleslaw (52°F). These food times were placed in cooler this morning no longer than 4 hours ago per PIC. All Time Temperature Control for Safety (TCS) foods which had been in the unit for less than 4 hours were moved back to the main refrigerator back of house to rapidly cool. PIC will discontinue use of cold holding unit until able to maintain an ambient temperature of 41°F or below. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection

Observed a staff member crack eggs into a pan with gloved hands and then switch to grabbing a plate. The staff member was stopped and told to wash their hands and change gloves after cracking eggs before changing tasks. Re-educated staff on when to wash and provided handouts. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks Corrective Action: Corrected at time of inspection.
