Inspector's notes
Observed sliced tomatoes (58°F), peppers (58°F), mushrooms (56°F), lettuce (58°F), opened containers of mayo and ranch dressing (56°F) measured with probing thermometer nearest to grill front of house. All Time Temperature Control for Safety (TCS) foods (paddy meat and chicken) which had been in the unit for less than 4 hours were moved to alternative refrigeration. All other TCS foods which had been in the unit overnight were embargoed (see embargo list). Manager will place TCS items in the nearby standing refrigerator until the prep line cooling unit can maintain temperatures below 41°F. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.
