Discussed the use of food grade or food safe lubricants with food equipment. Lubricants shall meet the requirements specified in 21 CFR 178.3570. Lubricants with incidental food contact, if they are used on food-contact surfaces, on bearings and gears located on or within food-contact surfaces, or on bearings and gears that are located so that lubricants may leak, drip, or be forced into food or onto food-contact surfaces. At time of inspection, the only toilet in the establishment is not operational (does not flush) and active conveying of sewage from a sewer pipe was observed in the outside area behind the building. Observed visible puddles of sewage in front of and behind establishment with staff attempting to mop the sewage in front of the establishment and transfer it into a large bucket. A permit holder shall immediately discontinue operations and notify the regulatory authority if an imminent health hazard may exist because of an emergency such as a fire, flood, extended interruption of electrical or water service, sewage backup, misuse of poisonous or toxic materials, onset of an apparent foodborne illness outbreak, gross insanitary occurrence or condition, or other circumstance that may endanger public health. Person in charge (PIC) states that the meats were placed into the display case 1 hour and a half before inspection. PIC had removed the meats the night before and placed into the walk in and had disconnected the display case to help clean and remove chunks of ice from the case. PIC had turned on the meat display case 2 hours before inspection. Ambient temperature of the meat display case was 47*F at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection (walk in).
