Observed large pot filled approximately 10 inches full of cooked beef with thick fat layer on top with an internal temperature of 49 degrees Fahrenheit. Per person in charge the beef was cooked the previous day. Reviewed cooling methods and parameters with person in charge. Beef product voluntarily discarded at time of inspection. Correct at time of inspection.
