Inspector's notes

Observed large container of cooked bean in walk in fridge with an internal temperature of 49F. Person in charge states that item was cooked yesterday evening. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Per employee the items were placed out there for temporary storage. Establishment is not approved for outdoor cooking and does not have the proper equipment including filled, functional handwashing sinks located outside. Remove all outdoor cooking equipment and the propane bottles. Correct prior to next routine inspection.

Observed various cooked meats, cheese, beans and sauces stored in the walk-in refrigerator measuring with an internal temperature of 48-52 degrees F. All of the noted items had a date mark on the container prior to today's date with no documentation of prior temperatures. These items were recommended for discard- see embargo list.
