Observed a large pot of cooked beans in the prep refrigerator. They were prepared yesterday, and the pot had a lid on it. The beans measured with an internal temperature ranging between 46-56 degrees F. They were recommended for discard. Discussed cooling parameters and alternative cooling methods.
