Establishment sells sandwiches, salads, yogurts, and other TCS foods from refrigerated units that are not equipped with a self-locking mechanism. Discussed with PIC and manager over the phone that the unit with TCS foods must be locked when the attendant leaves for the day. PIC and attendant agreed to lock the unit.

Inspector's notes

Observed food delivered at a temperature of 48*F-60*F at time of arrival using a probe thermometer (Garden Turkey Sandwich, Ham & Cheddar Sandwich, Chicken Ceasar Salad, Chicken pesto wrap, Cobb Salad, Turkey Club Sandwich, Yogurt parfait, Milk 2% Low-fat stating keep refrigerated, Chocolate milk stating keep refrigerated). Establishment had not taken temperature of goods prior to accepting the order after speaking with distributor it was determined the last known temperature was 2 hours prior to inspection. Discussed delivery procedures and possible addition of ice packs and external cooling to help in keeping food in a safe temperature range during transport. All food was discarded at the time of inspection. Embargoed Garden Turkey Sandwich, Ham & Cheddar Sandwich, Chicken Ceasar Salad, Chicken pesto wrap, Cobb Salad, Turkey Club Sandwich, Yogurt parfait, Milk 2% Low-fat stating keep refrigerated, Chocolate milk stating keep refrigerated. Observed food holding at 45*F using a probe thermometer in grab and go sandwich cooler (Kavita Probiotic Lemonade, Sabra humus snack, Yoplait Greek Yogurt Strawberry, Oh Snap! pickle Hottie Bites, Panino Prosciutto, Hillshire Snacking, Cobb Salad, Chicken Caesar Salad, chicken pesto sandwich, Turkey club, Garden Turkey Sandwich, Ham and cheddar Sandwich, Yogurt Parfait). Person in charge stated the Kavita Probiotic Lemonade the had been placed in the unit over night and was unsure of when it became out of temp. The PIC stated that the rest of the food in the cooler had been delivered an hour prior and was delivered temping at 41*F. Person in charge moved all food into neighboring establishments walk in to be brought down to 41*F with in an hour, and voluntarily discarded Kavita Probiotic Lemonade. Discussed that all TCS food being cold held should be kept at or below 41*F to ensure food safety. Embargoed Kavita Probiotic Lemonade. Correct By: Corrected At Time Of Inspection
