Macaroni and Cheese on the hot holding table measured at 91 degrees. PIC voluntarily discarded product. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee take out trash and began portioning pickles without washing hands prior. Also observed another employee touch bare forearm and hair and portion cookies without washing hands prior. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employees properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed back prep sink leaking from top of drain/discharge piping when water is turned on. Observed standing water under prep sink, nearby dry storage, and soda bibs originating from leaky prep sink. All plumbing must be maintained in good repair at all times. Establishment was not actively washing dishes at time of inspection. Discussed adjusting the machine so it injects the appropriate amount of chemicals during the run so that no non-sanitizer/rinse aid residues are left on the dishes after they are run through the machine. Person in charge called for maintenance on the machine.
