Observed greek yogurt and coconut whipped cream stored in the walk in with a temperature of 56F. The PIC had conducted temperature checks on the products 3 hours prior to inspection with the temperature of products being 31F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. The PIC placed all the items in the freezer to rapidly cool down to 41F. Observed walk in cooler storing dairy products with a temperature of 56.1F. All equipment storing TCS food products must be kept at 41F or less at all times. The PIC moved all the dairy products to the freezer, reset the cooler, and was able to get it back down to 41F. Discussed about getting the cooler checked to prevent any further issues.
