Observed a bucket being used to divert the overflowing water from the funnel drain to the floor sink under the three-compartment sink. Also observed leaking from the hand sink faucet when water is turned on. Also observed a pipe for the espresso machine draining directly under the rim of the floor sink. There needs to be a 1-inch air gap. Must repair all plumbing to a state of good repair prior to next routine inspection.

Observed vegan quiches made with cooked tofu and cooked tomatoes sitting out at room temperature. According to person in charge, quiches had been sitting out since 8am, more than four hours. All TCS (time and temperature controlled for safety) foods must be kept at 41*F and below to prevent bacteria growth. Discussed TCS foods with staff- cooked plant products, cooked beans, cooked rice, and cut tomatoes and lettuce are TCS foods that must be kept at 41*F and below or 135*F and above. Quiches were discarded at time of inspection. Corrective Action: Corrected at time of inspection.
