Inspector's notes
In the walk-in cooler, observed a medium container of sliced tomatoes, a small container of cooked sausage links, and a medium container of pico with no date mark. Person in charge (PIC) stated tomatoes prepared 7/17, sausage prepared yesterday, and pico prepared 7/19. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. In the walk in, observed a small container of housemade ranch with date mark 7/10 and sliced ham with date mark 7/10. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed can opener with food debris buildup on and surrounding the piercing blade. Can openers are a food contact surface and must be washed, rinsed, and sanitized and kept clean to sight and touch. Can opener was set aside to be washed at time of inspection. Corrective Action: Corrected at time of inspection.
