Observed Cole slaw and red salsa cooling in walk-in cooler enclosed with lid. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Observed cooked brisket in warmer with an internal temperature of 105-110*f. It was determined that the warmer was not preheated prior to inserting brisket and was reaching a minimum temperature of 90*F. Brisket had previously been moved to warmer 30 minutes prior to inspection and were moved back to smoker to increase temperature before hot holding.

Observed all sanitizer buckets with cloths stored in <10ppm concentration. The chemical dispenser was testing at <10ppm as well. PIC switched out the container, as the one installed was low on solution. The concentration now reads 150ppm quat and all sanitizer buckets were replaced. Correct By: Corrected At Time Of Inspection
