Observed cooked brisket in warmer with an internal temperature of 105-110*f. It was determined that the warmer was not preheated prior to inserting brisket and was reaching a minimum temperature of 90*F. Brisket had previously been moved to warmer 30 minutes prior to inspection and were moved back to smoker to increase temperature before hot holding.

Observed salsas for a catering order holding 50F in the Coca Cola refrigerator. The refrigerator was holding 54F ambient air temperature. Inspector lowered the dial to "1" and the refrigerator reads 41F now. Please be cautious when using beverage coolers to hold food products that require temperature control, as they are not designed to hold TCS food items. PIC moved the salsas to a working unit. TCS food items must be held at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
