In the second reach-in cooler in the back, observed pre-portioned sliced tomatoes and lettuce with no date mark. In the cooler in front of the register, observed 2 pre-portioned containers of cut fruit including melon with no date mark. Person in charge (PIC) stated items were prepared Saturday. PIC voluntarily discarded pre-portioned tomato and lettuce at time of inspection. PIC update date mark for cut fruit. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection. No detectable sanitizer in automatic, low temperature dishwasher. Determined the sanitizer bottle was empty. PIC changed the chlorine bottle and primed line. Re-sanitized the dishware that were in the unit manually. Please continue to manually sanitize equipment until unit is repaired/adjusted to dispense chlorine at the proper 50-100 ppm concentration. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels.

Dairy milk labeled "Keep refrigerated" and open containers of plant milks labeled "Refrigerate after opening" at 45-46*F internally in the north low boy reach-in (#2) and at 48-49*F internally in the southwest lowboy reach-in (#1) for an unknown time. Embargoed, PIC discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Corrective Action: Correct prior to re-inspection 8/12/25. Refrigerator #1 holding TCS beverages 48-49*F and refrigerator #2 is holding TCS items 45-46*F. PIC was able to turn down refrigerator #1 to below 41*F, but refrigerator #2 did not drop to proper temperature at the time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below.
