Inspector's notes

In the back walk-in cooler, observed multiple containers of raw chicken, a container of raw beef, a container of chickpeas, a container of baba ghanoush, and multiple containers of house made sauce containing tomatoes with internally probed temperature range of 44-47 degrees F. PIC stated items received this morning and have been in cooler less than 4 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative front walk in unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

At time of inspection, observed numerous raw chicken, raw beef, house made sauces, baba ghanoush, and chickpeas in the back walk-in cooler with internally probed temperature range of 44-47 degrees F. Ambient temperature of the walk-in was measured using min/max thermometer at time of inspection at 48.9 degrees F. All TCS items were moved to an alternate front walk in cooler at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection on 09/11/2026.
