Inspector's notes

In upright reach-in refrigerator/45.5, observed TCS food holding 48-49F including precooked eggs, tomato mozzarella sandwich, ham and swiss sandwiches, ham and cheese croissants. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per person in charge, the proper temperature of the unit was observed within two hours and rose when the unit was stocked with cold brew. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Service the unit as needed, and ensure the unit is operating properly before restocking it with TCS food. Corrective Action: Corrected at time of inspection.
