Inspector's notes
At about 8:35am, observed 2 o'clock discard time stamps on cut lettuce and tomatoes that are maintained at room temperature and monitored using time as a control. These time stamps exceed the maximum four hour time limit described in their own written procedures. Staff were instructed and the TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Also observed a pan of sliced tomatoes/56F without a discard time stamp that should have been provided for using time as a control. When using time as a public health control, ensure accurate time keeping/monitoring is occurring. The person in charge voluntarily discarded the TCS foods that were past discard times and not noted with the discard time. See embargo. Correct By: Corrected At Time Of Inspection
