In self service packaged sushi cold case, packaged sushi with internal temperatures of 50*F. Per manager, packaged sushi is cooled in bottom portion of prep table cooler for 45 minutes - 2 hours. Manager moved packaged sushi to walk in freezer to continue the cooling process. Recommended using walk in freezer and shorter cooling times for cooling of package sushi. Open self service cold cases are not meant for cooling but instead to maintain temperature. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Also, at 12:15pm, the sushi rice was noted as being discarded at 12:30 in the log book (the rice was still present). Core-3-305.14, C: Food Preparation.....Observed open containers of seaweed paper, avocado and sushi rice stored on edge of prep table with no protection available to shield from customers or passers by. The facility is currently undergoing a remodel, and this work space has not yet been completed. The unprotected food containers were relocated to the opposite end of the work space to provide protection from possible contamination. Correct By: Corrected At Time Of Inspection
