Corrective Action: Corrected at time of inspection. Empanadas containing cooked beef in hot box at 83-110*F internally. Manager was able to identify the time they were removed from the oven and put them under time control. Reviewed time control/temperature requirements with the manager. Cooked fries held in basket over the fryer, not under time control per manager, at 83*F internally. Manager reheated them to above 165*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.

Corrective Action: Corrected at time of inspection. Raw meats, cut tomatoes, leaf lettuce stacked high above the rim in pans in the top of the cold table at 48*F to 60*F internally. Manager stated they had been held as such less than two hours.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Corrective Action: Corrected at time of inspection. Hose extending to the ground connected to sink faucet with no back flow preventor. Employee disconnected the hose. Please add a back flow prevention device, such as a hose bib or atmospheric vacuum breaker, if a hose is to be connected.

Observed a new item sign that offered a fried egg. There was no consumer warning or disclosure on the sign. Discussed with person in charge (PIC) that they needed a consumer warning. PIC used a pen to write the warning and the asterisks at time of inspection. PIC stated that they will include/change the main menu if the dish becomes a regular part of the menu. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Corrective Action: Corrected at time of inspection.

Observed frozen raw chicken in a container thawing. Discussed approved thawing methods with person in charge (PIC). PIC moved the container to the cold-holding unit to finish thawing at time of inspection. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.
